Healthy Pumpkin Pie Chocolate Chip Energy Bites

Easy to make no time to waste and no baking to do.

RECIPE:

1 cup dates
1/2 cup pecans
1/3 cup pumpkin puree, not pumpkin pie mix
1/4 cup unsweetened flaked coconut plus extra to roll the balls in
1 tsp mini dark chocolate chips
2 tsp vanilla
3/4 tsp pumpkin pie spice
a little salt

Preparation:

– soak dates in water for 15-30 minutes
– drain
– with a food processor chop up the dates
– add all ingredients, except for the chocolate chips
– mix until smooth
– remove the mixture from the food processor
– fold in the chocolate chip
– form 10-12 energy balls with your hands
– roll each ball in the extra coconut
– put them on a lined cookie sheet
– put in the fridge to cool and harden
– store in an airtight container in the fridge.
